Well, I haven’t updated here lately with the last three cakes I made. Why, you may ask? I made all three of these cakes in one week. Yes, three cakes. One week. Oh, and on top of that, I made 10 gingerbread houses for a party we were going to! And, promptly after I dropped my last cake off I got sick. Terribly sick. I was sick for Christmas. I was sick for the day after Christmas when we celebrated with the boys. I was not a happy Meg. Finally, the day Tuesday after Christmas, after being sick for a week and a half, my hubby drug me to Urgent Care and I was diagnosed with a sinus infection. I left, filled my antibiotic prescription, took one, went to bed and woke up feeling so much better! So, here are the three cakes that I made during my crazy, busy, out-of-control week!

This is a snowflake cake that I made for our Bible study Christmas party. It was a marble cake, iced with peppermint buttercream, covered in red peppermint flavored fondant, and topped with royal icing decorations. A few words about this cake. I thought that this cake was absolutely gorgeous, and it came together very nicely. Until I tried to move it. Everytime I tried to move it, something would break or fall off. It took me a while, but I finally realized what I did. I found this cake on Wilton’s website, with directions and even a template for all the decorations that went on top. Except, the templates were wrong!! The white parts (I don’t know what they are called), were only supposed to be barely off the edge of the cake, not a couple of inches!! Now I know never to trust Wilton again! If done properly, the cake would have been fine. I will definately keep that in mind for next time

Up next is a graduation cake. This cake literally kicked my butt!! It was so much harder than I imagined. I’m not sure why, though, because I know that writing is still one of my weak areas, so I picked out a cake that the whole thing was just about covered in writing!! Plus, when I bought this cake pan on Amazon, everything I read said it was a two mix cake pan. As it turned out, it was actually three!! And, I’ve known for a while that the floors in our hundred plus year old house are unlevel, but it was really accentuated with this cake. My husband has a new job for next week of getting our oven completely level for me. I loved the idea of this cake, and just need some more practice on it to perfect it.




Well, I saved my favorite cake for last! I have always wanted to do a Thomas cake. Big C LOVED Thomas for years, until someone convinced him that Thomas was for babies, and he decided he couldn’t like him anymore, way too young. So, I never got to make my Thomas cake. Until this December!! My friend’s son was turning 2 and is a huge fan of Thomas. It was last minute, but I could not pass this opportunity by. It was so much fun and I’m so happy with how everything turned out. Here’s to hoping for lots more Thomas cakes in the future!!
And, just for fun, here are the gingerbread houses that I made that week, too. It was a lot, but I cannot say how glad I am that I did it, and how much fun all the kids had. I would do it again in a heartbeat!
